With good old time and a little love, it will ferment and you can use it as the yeast in bread baking. You will need to feed it regularly (with more flour and water) to keep him happy and alive. There are so many versions on what Tandoori Chicken should be, and what colour it should be, but it’s really just a simple marinade that is rubbed on and cooked in a big clay oven (tandoor) and it certainly doesn't have to be bright red in colour. Once cooked and still hot, pour into sterilised jars and it'll keep for upto 6 months. Great for spreading on rich brioche, poured over yogurt, or even added to a chilled glass of Prosecco. I'm using golden granulated sugar in my recipe, but you can use whatever sugar you have. Jam sugar has added pectin which will help the compote set, but I never have any to hand. Make sure you taste a few cherries to see how sweet they are. If they are quite sour and a little underripe add a bit more sugar, if they are already very sweet, reduce the sugar slightly.</image:caption>

I’m all about adding a little spice.  Most Indian homes will have one (sometimes two) filled with all their favourites. Mine has whole seeds that I grind fresh, allowing them to taste their best and burst with flavour and aroma. High quality ingredients are the secret to creating delicious dishes.
