Fresh Turmeric Pickle

Makes 1 small jar

I don’t need to preach about the incredible health benefits of turmeric. So if you want your root turmeric to last you longer, it’s time you make your own pickle.


Ingredients

150g root turmeric, peeled and cut into juliennes
juice of 1 lemon
1/2 teaspoon sea salt

Method

  1. Mix all the ingredients together and pop in a small airtight jar. Make sure all the turmeric is immersed in salty lemon juice, topping it up if required.

  2. Enjoy with any Indian meal for a flavourful superfood boost.

My Tip: Turmeric is more powerful when eaten with crushed black pepper. I like to add a few twists of pepper on my serving just before eating.
