Tagliatelle Pomodoro

Takes: Under 15 mins

You always need a quick pasta dish up your sleeve and this is mine.

The sauce can be made while the pasta is boiling which makes this a super speedy meal perfect for a mid week dinner.

 


Ingredients

200g pasta, fresh or dried, I like tagliatelle for this
1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, sliced
15 - 20 cherry tomatoes or 200g tinned tomatoes
2 tablespoons pesto (optional)
fresh basil leaves, to garnish
fresh grated Parmesan cheese, to serve

Method

  1. Fill a pan with boiling water and add the salt. If using dried pasta, pop it in now and cook as per the pack instructions, typically 10 minutes. If your pasta is fresh, it won’t need as long so start the sauce first and cook your pasta after a few minutes.

  2. Start the sauce by heating the olive oil and adding the garlic.

  3. After 2 minutes throw in the tomatoes and allow to cook for a few minutes before adding the cooked pasta with a ladle of salty pasta water.

  4. Toss together and turn off the heat.

  5. Spread the pesto (if using) on the base of your serving plate.

  6. Pile on the pasta, sprinkle over the fresh basil and grate over lashings of Parmesan cheese. Dive in!
