Broken Strawberries with Hazelnut Cream

Serves: 4 people


Takes: Up to 15 mins

Strawberries are beautifully sweet and taste fantastic when topped with hazelnut cream.


Ingredients

300g strawberries, stalks removed
1 tablespoon sugar
2 cinnamon sticks
4 green cardamom pods
4 cloves
1 star anise (optional)
few mint leaves
4 tablespoons thick cream
½ tablespoon icing sugar
good pinch saffron, soaked in 1 teaspoon warm water (optional)
2 tablespoons hazelnuts, roughly chopped, reserving a few for garnish

Method

  1. In a pan gently heat the strawberries with the sugar, cinnamon, cardamom, cloves, star anise (if using) and mint for 5 minutes.

  2. In the meantime whip the cream with the icing sugar. Taste and add more sugar if desired remembering that the strawberries will add some sweetness too.

  3. Stir through the saffron and the hazelnuts.

  4. Serve the broken strawberries with a good dollop of hazelnut cream.

My Tip: This recipe also tastes great mixed with raspberries and blueberries.
