Sticky Peaches with Vanilla Lime Cream

Serves: 2 people


Takes: Up to 15 mins

This has to be one of the easiest desserts to make and it tastes fantastic. Use any fruit that are in season and try out different spices in your cream, and you can use a thick low fat yoghurt if you prefer.


Ingredients

3 heaped tablespoons brown sugar
good pinch of nutmeg
5 green cardamom pods, bashed and bruised
2 cinnamon sticks
juice and zest of 1 lime
1 vanilla pod
4 peaches, stones removed and cut into thick slices
4 tablespoons thick cream or yoghurt

Method

  1. In a large frying pan gently heat the sugar and add the nutmeg, green cardamom, cinnamon and a good squeeze of lime juice.

  2. Remove the seeds from the vanilla pod, set aside, and add the pod to the pan.

  3. Place the peaches flesh side down in the pan and allow to cook slowly until caramelised and sticky but still holding their shape.

  4. Make the vanilla lime cream by mixing together the vanilla seeds, lime zest and cream.

  5. Serve the peaches drizzled with syrup and topped with a good dollop of vanilla lime cream.
