Paprika Padron Peppers

Serves: 4 - 6 people


Takes: Up to 15 mins

These are super quick and easy to make. Padron Peppers are like a roulette, only a few are spicy hot and the rest have no heat. If you prefer more heat you can always use jalapenos, but make sure you remove the seeds as these can be very very fiery.


Ingredients

3 tablespoons olive oil
20 – 30 Padron peppers, washed
1 - 2 green chillies, finely chopped
generous pinch of sea salt (I love Maldon smoked salt)
generous pinch smoked paprika

Method

  1. Heat the olive oil in a frying pan and add the Padron Peppers and the green chilli.

  2. Toss together for a few minutes until the skins are blistered.

  3. Drain on absorbent paper and sprinkle generously with sea salt and smoked paprika.
