Nutty Apple Crumble

Takes: 30 mins to 1 hour

All too often there is never enough fruit and the crumble isn’t crunchy enough for me. This is loaded with sweet sticky apples topped with lots of crunchy nutty crumble and served in individual ramekins so there aren’t any crumble stealers!

 


Ingredients

1 apple, I like Braeburn, peeled, cored and cut into bitesize pieces
zest and juice of 1 juicy orange
1 heaped tablespoon brown sugar
25g butter, cold and cut into small cubes
50g plain flour
small handful hazelnuts, roughly chopped
1/2 tablespoon oats (optional)

Method

  1. Preheat the oven to 200°C/400°F/gas 6.

  2. Put the apples, orange zest, orange juice and half the sugar in a bowl and toss together.

  3. Make the crumble by rubbing the butter and flour together using your fingertips. When it resembles coarse breadcrumbs stir through the remaining sugar, hazelnuts and oats (if using).

  4. Divide the apples into 2 ramekins or small baking dishes and sprinkle the crumble generously over the top.

  5. Pop in the oven and bake for 25 - 30 minutes or until the crumble has turned golden brown and catching at the edges. Serve hot with ice cold cream or warm custard.
