Melting Creamy Camembert

Serves: 4 - 6 people


Takes: 15 mins to 30 mins

Camembert tastes great once baked and the inside oozes out. Perfect on its own but even better when a few extra ingredients are added to liven up the flavour. Serve with some crusty bread for the perfect treat.


Ingredients

2 tablespoons olive oil
1 small onion, finely sliced
zest of 1/2 lemon
good pinch of lemon thyme
2 dried prunes, stone removed and chopped into small pieces
2 dried apricots, chopped into small pieces
1 camembert in the box, at room temperature

Method

  1. Firstly preheat the oven to 200°C/400°F/gas 6.

  2. Heat half the olive oil in a pan and fry the onions until golden brown and caramelised.

  3. Remove from the heat and stir in the lemon zest, lemon thyme, dried prunes and dried apricots.

  4. Remove the camembert from its plastic wrapping and cut in half horizontally so you can put the filling in the middle like a sandwich. Stuff the caramelised oniony fruity filling in between the two halves and put the camembert back in the box it came in. Score the top and drizzle the remaining olive oil over it and sprinkle with a little more lemon thyme.

  5. Wrap a little foil around the base of the box in case it leaks (which it almost certainly will if the box is glued instead of stapled together). Place the lid back on and put on a baking tray. Bake in the oven for around 15 - 20 minutes until melted.

  6. Remove the lid and serve warm and the cheese is all gooey.
