French Onion Soup

Serves: 2 people


Takes: 30 mins to 1 hour

The key to the perfect French Onion Soup is cooking the onions low and slow until deeply caramelised. When you add the stock the flavour runs through the soup creating the most delicious creation.


Ingredients

2 tablespoons butter
350g onions (around 4 medium sized onions), finely sliced
1 clove garlic, finely chopped
1 tablespoon plain flour
800ml chicken stock
salt and pepper, to taste
2 slices of French bread
50g Gruyere cheese
chopped parsley to serve (optional)

Method

  1. Gently heat the butter in a heavy pan and add the onions. Stir well and allow to cook slowly on a low heat until reduced, soft and light golden brown. This will take at least 30 minutes. Stir often to prevent the onions from burning.

  2. Stir in the garlic and allow to cook for 30 seconds before adding the flour and stirring well.

  3. After a few minutes, stir in the stock, a little at first to allow the flour to thicken and then pour in the rest.

  4. Turn up the heat to medium and bring to a low simmer. Cook the French Onion Soup for 15 minutes. You’ll start to see the soup change to a rich brown colour.

  5. In the meantime, preheat the grill to high.

  6. When the soup is ready, taste and adjust it with salt and pepper if you need to.

  7. Transfer the soup to an oven proof serving bowl and lay a slice of bread on top.

  8. Generously grate over the cheese and pop under the grill for a few minutes until it’s all melted and bubbling.

  9. Serve straight from the oven sprinkled with parsley (if using).
