Fattoush Salad

This simple salad has always been a favourite of mine.

It’s super fresh with hints of lemon, garlic and herbs. The crunchy texture is made from toasting stale bread and it’s a great recipe to use up fridge salad leftovers!


Ingredients

For the Fattoush Salad:
1 pitta bread, or any stale bread will do, ripped into small bitesize pieces
1 tablespoon olive oil
2 tomatoes, roughly chopped
1 romaine lettuce, roughly chopped
½ cucumber, cut into large chunks
5 radish, roughly chopped
1 small red onion, roughly chopped
small handful of flat leaf parsley leaves, roughly chopped
small handful of fresh mint, roughly chopped

For the Lemon Garlic Dressing:
2 tablespoons olive oil
juice of ½ lemon, to taste
1 garlic clove, crushed
salt, to taste
1 teaspoon sumac

Method

  1. First toast the bread. Preheat the oven to 180°C/350°F/gas 4.

  2. Lay the bread on a baking sheet, drizzle with oil and bake in the oven for around 10 minutes, or until the bread is dry, golden brown and crispy.

  3. Place the remaining salad ingredients in a bowl.

  4. Make the Lemon Garlic Dressing by whisking all the ingredients together. Taste and adjust the seasoning with more salt and lemon juice if required.

  5. Once the bread is toasted, add to the salad bowl and pour over the dressing. Toss well and allow to sit for a few minutes before serving.

  6. Serve the Fattoush Salad as a refreshing side to any flavourful meal.
